A day set aside especially for those who raised us. It doesn’t necessarily mean they were the ones who gave us life, but they were the ones that made sure we were fed and warm at night. Funny how life is. 

I know one rule of thumb when it comes to mothers-Even when they’re wrong, they’re right! I guess this just teaches us respect as we’re growing up. I remember teaching my sons that no matter what their teacher said in school, consider it the law. They may not agree, but I always asked, “Did your teacher ask your opinion???” I’ll give you a guess at what their answer always was. If we had “issues” with anything their teacher did or said, we’d discuss it at home, and together we would take any action needed. Respect. Not something all kids have learned lately. 

Have you ever seen a mom who would make 4 different meals for 4 different children, based on their likes and dislikes? I hope not! Speaking from a mom’s point of view, being caretaker, nurturer, disciplinarian, chef, housekeeper, taxi driver, etc. is not easy. In other words, trust us moms and try new things, like this great taco ziti bake.

Well, I’ve got a recipe for you! I just love this little casserole that I discovered on the Just A Pinch recipe site HERE. It is very similar to something my grandma and mom used to make with macaroni, and I haven’t found a person who doesn’t love it.

I’ve made it with ziti, shells, macaroni and egg noodles. It’s so easy and perfect for a weeknight dinner. 

Taco Ziti Bake
  1. 3/4 bag(s) ziti noodles,
  2. 1 lb of ground beef
  3. 1 pkg taco seasoning,
  4. 1 c water
  5. 1/2 pkg cream cheese
  6. 1 1/2 c shredded cheese (mexican mix)
  1. 1. Boil pasta until just cooked. Brown ground beef and drain. Mix taco seasoning and 1 cup of water w/ ground beef for 5 min. Add cream cheese to beef mixture, and stir until melted and remove from heat.
  2. 2. Put pasta in casserole dish and mix in 1 cup cheese. Top pasta/cheese with beef mixture and gently mix, top w/ remaining cheese. Bake at 350* uncovered for 15-20 minutes
