Southern Ham, Pasta & Pea Salad

This is as Southern as it gets. A combo of two Southerner’s  favorites-creamy pea salad and creamy pasta salad, all rolled into one dish. Ham, eggs, herbs, onions (two kinds!) and more. Creamy and yummy and perfect for a side to sandwiches, roast, chicken or pretty much anything. For me, I eat it alone for lunch with some iced tea. 

Ham, Pasta and Pea Salad
  1. 4 oz. dry macaroni, 2 cups cooked
  2. 1 (16 ounce) package frozen sweet peas, rinsed and thawed
  3. 2 green onions, chopped
  4. 1/4 cup chopped red onion
  5. 2 celery stalks, chopped
  6. 1 1/2 cup shredded mild cheddar cheese
  7. 2/3 cup (approximately) diced ham
  8. 1 teaspoon freshly ground black pepper
  9. 1 1/2 teaspoon salt
  10. 1/4 teaspoon garlic powder
  11. 1/2 teaspoon onion powder
  12. 1/2 teaspoon celery seeds
  13. 1/4 teaspoon dried dill weed
  14. 1 teaspoon dried or fresh parsley (optional)
  15. dash Cajun seasoning
  16. 3/4 cup mayonnaise
  17. 1/2 cup sour cream
  18. sprinkle of dry ranch dressing mix (optional)
  19. 2 Tablespoons heavy cream
  20. 2 hard boiled eggs, peeled and cut into wedges for top
  1. In a large bowl, mix everything well except egg wedges. You can also chop the eggs and add to the salad if you'd like. I've done it both ways.
  2. Top with eggs for garnish.
  3. Serves 8-10
  1. Use different kinds of pasta too as well as add whatever you've got on hand-red bell peppers, cubed cheeses, diced salami. If you want to make it Italian just add a little Italian dry seasoning and cubed mozzarella cheese along with diced pepperoni. Greek-add crumbled feta instead of cheddar.
