Soft Lemon Cookies
I worked for a health insurance company when I was 30, and the admin assistant brought these one day and changed my way of thinking about homemade cookies forever. They were so good, and when she told me they were made with only 3 ingredients-lemon cake mix, cool whip and an egg, I knew I had to try them out. Just know that the batter is very stiff, but it’s supposed to be that way. You roll them in powdered sugar before baking, and they form crackles-very pretty.
I’ve never tried this recipe with any other flavor of cake mix, but I’m sure you could.
- 1 box lemon cake mix (dry)
- 2 cups thawed Cool Whip
- 1 egg
- 1 cup powdered sugar
- Preheat oven to 350 degrees. Use parchment paper or silpat mat or lightly spray cookie sheet with nonstick cooking spray.
- In a bowl mix all ingredients but powdered sugar. Drop by spoonfuls into a bowl of powdered sugar and roll. Place on prepared cookie sheet. Cook 13 minutes. Don't overbake. Makes 2 dozen.
