Her name is Robin Chapman. It happened about 15 years ago. It started with a chuck roast.
Chapman says she shares credit for the recipe’s fame with her friend Karen Farese, who helped launch the recipe to stardom by putting it in her church’s cookbook.
Now it’s become famous through Pinterest and pinned about 1 million times, and that’s really a feat in this social media world!
TV appearances, cookbooks and rave reviews have followed, and very well deserved I might add.
Now, you KNOW I’ve tried this recipe, don’t you? It calls for simple ingredients-chuck roast, 1 packet of dry ranch dressing, 1 packet of dry au jous mix, some pepperoncini peppers and 1 stick of real butter. That’s right. BUTTER. 1 STICK.
I’ve attempted it with 1/2 stick, sliced pepperocinis, and more variations. BUT what I end up with is a variation on a theme and not the theme itself. You can, however, get away with subbing dry beef gravy mix for the packet of dry au jus mix.
Today I also used bone-in, skin-on chicken thighs (about 7 or 8) instead of the chuck roast. It’s in the slow cooker on low and smells amazing, and I truly hate the overuse of that word, but it really does, and the word “amazing” is truly well-deserved in this particular case.
I’m an Aldi’s girl, so I got the 2 dry packets from Aldi’s.
The pepperoncini peppers came from another store, but the chicken thighs were from Aldi’s.
Season up the chicken thighs – use what you have and/or what you like. I used Kickin’ Chicken seasoning mix.
Spray your slow cooker with nonstick spray and throw in the chicken, sprinkle with seasonings, Sprinkle with both packets of mixes and slice the stick of butter over the top.
Throw the peppers on top-I used about half this jar or more.
Then turn it on high until the butter starts to melt like this. Then turn it down to low for about 4 hours. Don’t peek!

It serves 4. You could also sub chicken breasts (I’d use boneless because it won’t take as long to cook)-use 4 to serve 4.
- 6-8 bone-in, skin-on chicken thighs
- 1 packet dry ranch dressing mix
- 1 packet dry au jus mix or beef gravy mix (that's what I had)
- 1 stick real butter, sliced
- 1/2 jar pepperoncini peppers
- Spray the inside of a slow cooker with nonstick spray.
- Season chicken and place on bottom. Sprinkle with salt, pepper, any seasoning you'd like.
- Sprinkle with both packets. Add butter to top.
- Top with peppers. Cover and cook on high until butter starts melting.
- Turn to low and cook 4 hours. Serves 4.
